Smokey Pumpkin Mac ‘n Cheese Recipe

Method to Prepare Smokey Pumpkin Mac ‘n Cheese:

  • Mix all the dry ingredients into the flour.
  • Preheat the oven to 220°C
  • Bring a large pot of salted water to a boil and cook the macaroni pasta according to packet instructions. after cooked you can place the pasta in an oven-proof dish
  • In a medium saucepan with medium-low heat, heat the olive oil and sauté the garlic until soft with fragrant. after that Add in your pumpkin scraps and cook until soft, meanwhile Lightly season with salt and pepper
  • Combine all the ingredients in a blender or a food processor, and blend until very smooth. Taste and adjust seasoning
  • Pour the cheesy sauce over the pasta and mix well. Top with vegan mozzarella, breadcrumbs, and pumpkin seeds, and bake for 10 mins
  • Leave to stand for 5 mins before serving

Ingredients for Smokey Pumpkin Mac ‘n Cheese:

Pasta:

  • 400g macaroni pasta

 Smokey Pumpkin Cheese Sauce:

  • 300g pumpkin, roughly chopped
  • 1 clove garlic, sliced
  • 1 tbsp extra virgin olive oil
  • ½ tsp lemon juice
  • Take 75g cashew and, soak it for at least 1 hour
  • 3-4 tbsp nutritional yeast
  • Smoked paprika- 1/3 tbsp
  • Sweet paprika- 1/3 tbsp
  • Vegetable bouillon/stock powder- 1/3 cup
  • ¾ cup water
  • Pinch of white pepper (Optional)
  • Salt & pepper to taste

Garnish:

  • ½ cup breadcrumbs
  • ½ cup vegan mozzarella
  • 1 tbsp pumpkin seeds
